Hold buttons A+B+C and press start on the title screen.
A screen will apear that says "Stage Select". You can now chose a level!
Crazy Taxi (dreamcast)
Get a Bicycle.: First choose Arcade or Original and then the time you want to play, then highlight the driver you want to pl as and simultaneously press the L and R triggers 3 times and then A to select, If you did it correctly you should hear a bike bell and should be able to play as the bike.
